Coconut and Chili Kerabu Salad By Rasa Malaysia

Ingredients:

1⁄2 red onion, thinly sliced
2 tablespoons shredded coconut
1 red bell pepper, seeded and thinly sliced
2 1⁄4 cups bean sprouts
1⁄2 red chili, seeded and finely chopped
1 small handful mint leaves, roughly chopped

FOR THE DRESSING:

4 tablespoons fish sauce
juice of 2 limes
2 teaspoons sugar
1-inch piece gingeroot, peeled
