Buckwheat hotcakes with coconut yoghurt, fresh berries, maple & almond butter by GatherAndFeast

Ingredients 

the buckwheat hotcake recipe is a simple version of the ricotta hotcakes recipe on the G&F site:
2 eggs separated
1/2 cup almond milk (or coconut water or water)
1 banana roughly mashed
1/2 cup buckwheat flour
1 tsp baking powder
1 tsp vanilla
Pinch flaked sea salt

whisk the egg whites until stiff and set aside. mix the other ingredients together, then fold in the egg whites. cook a few mins on each side and serve with your favourite toppings.
