14 ounces very good butter (use 82% or 86% milk fat if you can find it)

727 1/2 grams (6 cups) all-purpose flour

18 1/2 grams (4 1/2 teaspoons) baking powder

6 grams (1 1/2 teaspoons) baking soda

100 grams (1/2 cup) sugar

6 grams (1 1/2 teaspoons) salt

4 ounces tender, fresh kale

1 tablespoon lemon juice

1/2 cup pine nuts

3/4 cup grated pecorino or Parmesan, plus more for sprinkling

1/2 cup currants (optional)

1/2 teaspoon freshly ground black pepper

1/4 teaspoon flaky sea salt (like Maldon)

1 1/2 to 2 cups cold, well-shaken buttermilk

1 egg
